This Taco Tuesday we’re celebrating with queso. Lots and lots of ooey, gooey, cheesy goodness. Thanks to our friends at Delish.com, we’re making up a fresh batch of Texas gold, aka queso dip, for all to share.
Queso quite literally is Spanish for “cheese.” Queso is more than just an appetizer or a sauce at your favorite Mexican restaurant, it is a staple. The classic queso recipe, or Chili Con queso as it is often referred, is at its simplest, a mixture of various cheeses and chile peppers. Queso’s origins can be traced back to restauranteur Otis Farnsworth. In the early 1900s, Farnsworth opened a Tex-Mex restaurant called the Original Mexican Restaurant in San Antonio. The chile con queso quickly became the most popular dish on the menu.
Queso dip in America is quite different than the cheese dips typically found in Mexico. What difference do you ask? American versions of the queso dip are always made with processed American cheese. Go figure. Sometimes it can be found with different variations of cheeses, peppers, and tomatoes but one ingredient is always consistent. Cheese. Whether its classic Velveeta, chihuahua, white cheddar, or sliced American the comfort you get from a big bowl of cheese served alongside warm tortilla chips is hard to beat.
Enough of the small talk lets jump into our favorite queso recipe. First, the ingredients you’ll need:
- Fresh Mozzarella
- Monterey Jack
- Processed American Cheese
- 1/2 cup of whole milk
- Pickled Jalapenos – minced
- Tortilla chips

Directions:
- The first step is the key to perfect queso. The secret sauce. Are you ready? Take a large pot and a little bit of water (2 cups). Then take a glass bowl and place it on top of the pot. Turn the eye on high until the water begins to boil. The steam will heat the bowl and you will be able to make cheese sauce that does not burn.
- Take all of your cheese and add it to the glass bowl. Add a half cup of whole milk. With a spatula, stir the contents of the bowl until the cheese melts. Add your pickled jalapenos and Wah-La! The best queso you’ll ever eat.
